What Skills Do I Need to Use These Recipes?
No special skills are needed at all. If you have mastered such basics as microwaving potatoes, cutting bagels, slicing an onion, checking the oven temperature and, furthermore, you can identify the major building blocks of health food (pancake mix, chocolate chips, etc.), then you have what it takes to create great meals using these recipes.
Do I Need A Kitchen With Fancy Appliances and Cookware?
Take a look at the kitchen below. I photographed it in Williamsburg, Virginia. It’s a replica of a kitchen from the 1700’s. You know what? Even with this stuff you can create great tasting food. The moral of the story is that you don’t need fancy appliances and cookware to create great foods. Just the basics, like a set of knives, some bakeware, etc., are all that is needed. You don’t need a $300 mixer. A small electric mixer (you know…the ones for like $30) are just fine.

What Should I Stock Up On In My Kitchen?
That’s always a difficult question to answer since it depends on the types of food you cook. There are items that you might purchase, say Lemon-Pepper, that you use once and it then sits unused for two years. However, you may use so much black pepper in your cooking that you always want to keep black peppercorns in stock.
I’ve posted my short list of “must haves” in The Well-Tempered Pantry. There are many more items that I keep on hand but these are the things I am always replacing. And remember, this is my short list based on my culinary tastes.
